Healthy Recipe: Baked Black Bean Burritos

Mexican food is easy to throw together on a busy night, the flavors and richness leaving you full and satisfied. These vegetarian burritos are kinda like burritos and kinda like enchiladas, but they’re certainly delicious. Served with a salad or even some tamales and re-fried beans, they’re a surefire favorite for Mexican night. Add-ins for this recipe may include Poblano or banana peppers, currents, some sauteed beef if you want it with meat, or even some pepper jack cheese for some extras zest on top!   • 2 chipotles in adobo sauce, finely minced
  • 1 cup light or regular sour cream
  • Two (15-ounce) cans low-sodium black beans, drained and rinsed
  • 2 cups corn kernels (fresh or frozen)
  • 2 medium avocados, diced 1/2-inch
  • Eight 8″ flour tortillas
  • 2 cups salsa
  • 1 cup shredded light cheddar or Monterey Jack cheese


1. Preheat the oven to 350°F. Coat an 9′ x 13′ baking dish with cooking spray.

2. Combine chipotle and sour cream in a bowl. Puree half the beans in a food processor; add to the sour cream mixture.

3. Stir in the whole beans and corn until well combined. Gently stir in the avocado.

4. Warm the tortillas according to package directions.

5. Working one at a time, spoon one-eighth of the bean mixture down the center of each. Roll the tortillas closed and place seam-side down in the prepared baking dish. Spoon the salsa over the tortillas and top with the shredded cheese.

6. Cover and bake 20 minutes until cheese is melted and burritos are warmed through.
